- 4 pieces chicken breasts 6 oz each
- ½ cup plain Greek yogurt
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley chopped, for garnish
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, honey, garlic powder, onion powder, paprika, salt, and black pepper. Whisk together until smooth.
Place the chicken breasts in a baking dish and pour the marinade over them, ensuring each breast is well-coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes (or up to overnight for more flavor).
After marinating, remove the chicken from the fridge and place it in the preheated oven. Bake for about 25 minutes or until the internal temperature reaches 165°F (75°C) when checked with a meat thermometer.
Once cooked, take the chicken out of the oven and let it rest for 5 minutes covered with aluminum foil to keep it warm and juicy.
Garnish with chopped parsley before serving.
You can serve this chicken with a side of steamed vegetables or over a bed of rice or quinoa for a complete meal. This recipe can be easily doubled for larger gatherings and works excellently as leftovers. Feel free to customize the seasoning to your preference – adding herbs or spices can enhance the flavor even more!
