Ingredients
  

  • 1 lb ground beef
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 packet taco seasoning (about 1 oz)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag frozen tater tots (32 oz)
  • 1 cup sour cream
  • 2 green onions sliced (for garnish)
  • 1 tablespoon olive oil (for cooking)

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Drain any excess fat, then stir in the black beans, diced tomatoes (with their juices), and taco seasoning. Cook for another 5 minutes until everything is heated through.
  • In a baking dish, spread the beef mixture evenly along the bottom.
  • Layer half of the shredded cheese over the beef mixture.
  • Arrange the frozen tater tots evenly over the cheese layer.
  • Bake in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and sprinkle the remaining cheese on top. Return to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Allow the casserole to cool for a few minutes before serving. Top with sour cream and sliced green onions for added flavor.

Notes

For a spicier version, consider adding jalapeños to the beef mixture or using spicy taco seasoning.
You can substitute ground beef for ground turkey or chicken for a lighter option.
Leftovers can be stored in the refrigerator for 3-4 days and reheated in the microwave.
