- 1 can black beans (15 oz), drained and rinsed
- 1 can diced tomatoes with green chilies (10 oz)
- 1 packet taco seasoning (about 1 oz)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag frozen tater tots (32 oz)
- 1 cup sour cream
- 2 green onions sliced (for garnish)
- 1 tablespoon olive oil (for cooking)
Preheat the oven to 375°F (190°C).
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
