  • cups whole rolled oats
  • 1 cup creamy natural peanut butter
  • ¼ cup ground flaxseed
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips
  • 2 tablespoons chopped peanuts
  • 2 tablespoons unsweetened shredded coconut
  • Pinch sea salt optional

  • In a large bowl, place the oats, ground flaxseed, chopped peanuts, shredded coconut, and sea salt. Stir to combine.
  • Add in the peanut butter, honey, and vanilla extract. Stir everything together until thick and sticky.
  • Fold in the mini chocolate chips gently to distribute evenly without melting them.
  • Use a spoon or small cookie scoop to portion out the mixture. Roll into 1-inch balls using your hands.
  • Place energy balls on a parchment-lined tray. Leave space between each so they don’t stick together.
  • Chill the tray in the fridge for 30 minutes or until firm and ready to enjoy.

Notes

Store in the fridge for up to a week or freeze up to 3 months. Great for grab-and-go snacking anytime!
