In a large bowl, place the oats, ground flaxseed, chopped peanuts, shredded coconut, and sea salt. Stir to combine.
Add in the peanut butter, honey, and vanilla extract. Stir everything together until thick and sticky.
Fold in the mini chocolate chips gently to distribute evenly without melting them.
Use a spoon or small cookie scoop to portion out the mixture. Roll into 1-inch balls using your hands.
Place energy balls on a parchment-lined tray. Leave space between each so they don’t stick together.
Chill the tray in the fridge for 30 minutes or until firm and ready to enjoy.
Notes
Store in the fridge for up to a week or freeze up to 3 months. Great for grab-and-go snacking anytime!
