Preheat your oven to 350°F (175°C). Grease your pie dish or line it with baking paper.
In a mixing bowl, combine the all-purpose flour, baking soda, and salt. Set aside.
In another bowl, using an electric mixer or whisk, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
Add the egg and vanilla extract to the butter mixture, and beat until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing gently with a rubber spatula until just combined. The dough will be thick.
Set aside about 1 cup of the cookie dough and press the remaining dough evenly into the bottom and up the sides of the prepared pie dish.
Spread the Nutella over the cookie dough crust, ensuring even coverage. If you're using chocolate chips, sprinkle them on top of the Nutella.
Crumble the reserved cookie dough over the Nutella layer to create a topping.
Bake in the preheated oven for 25-30 minutes or until the edges are golden brown and the center is set.
Allow the pie to cool for at least 10 minutes before slicing and serving.
For an extra touch, serve with whipped cream or ice cream.
Store leftovers in an airtight container at room temperature for up to 3 days.
