Ingredients
  

  • 12 oz pasta (penne or fusilli)
  • 1 can (14 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese plus extra for serving
  • fresh basil leaves for garnish (optional)

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Add the crushed tomatoes, vegetable broth, dried oregano, salt, and black pepper. Stir well to combine.
  • Bring the mixture to a gentle boil and then add the pasta. Stir it into the sauce and reduce the heat to a simmer.
  • Cook the pasta according to package instructions, stirring occasionally, until al dente (usually around 10-12 minutes).
  • Once the pasta is cooked, lower the heat and stir in the heavy cream until well combined.
  • Add the grated Parmesan cheese and mix until melted and creamy.
  • Taste the pasta and adjust the seasoning if necessary.
  • Remove from heat and garnish with fresh basil leaves and extra Parmesan cheese if desired.
