Ingredients
  

  • 12 oz smoked sausage, sliced
  • 12 oz penne pasta
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper diced any color
  • 1 can diced tomatoes 15 oz
  • 3 cups chicken broth 720 ml
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes optional, for heat
  • to taste salt
  • to taste pepper
  • 1 cup grated Parmesan cheese 100 g
  • fresh parsley for garnish, optional

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add the sliced smoked sausage and sauté for about 5 minutes, or until browned.
  • Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook for another 3-4 minutes, stirring occasionally, until the vegetables have softened.
  • Stir in the penne pasta, diced tomatoes (with juices), chicken broth, Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Make sure the pasta is submerged in the liquid.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until the pasta is cooked al dente and has absorbed most of the liquid.
  • Once cooked, remove the pot from the heat and stir in the grated Parmesan cheese until melted and well combined. Adjust seasoning if necessary.
  • Serve hot, garnishing with fresh parsley if desired.

Notes

Feel free to customize this dish by adding in your favorite vegetables, such as spinach or zucchini.
If you prefer a creamier sauce, you can stir in a splash of heavy cream or a dollop of sour cream before serving.
Leftovers can be stored in the refrigerator for up to 3 days and can be reheated easily on the stovetop or in the microwave.
