  • 2 Tablespoons olive oil for searing
  • 2 boneless skinless chicken breasts
  • ½ teaspoon dried sage
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup fresh cranberries
  • 2 Tablespoons orange juice
  • 2 Tablespoons honey
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

  • Season chicken breasts with dried sage, thyme, salt, and black pepper on both sides.
  • Heat olive oil in skillet over medium heat. Sear chicken 5–6 minutes per side until golden. Remove and set aside.
  • Add cranberries, orange juice, honey, cinnamon, ginger, cloves, and nutmeg to the pan. Stir and cook 5–7 minutes until cranberries begin to burst and sauce thickens.
  • Return chicken to pan, spoon sauce over the top. Cover skillet and pressurize cooker.
  • Once pressure builds, cook several minutes. Then slow release steam. Serve warm.

Notes

Use frozen cranberries if fresh aren't available. Maple syrup is a great honey substitute. For spice simplicity, use pumpkin spice blend.
