This cozy one-skillet cranberry orange chicken is pressure-cooked to perfection with juicy cranberries, bright orange juice, and warming spices for a flavorful weeknight meal with minimal cleanup.
Season chicken breasts with dried sage, thyme, salt, and black pepper on both sides.
Heat olive oil in skillet over medium heat. Sear chicken 5–6 minutes per side until golden. Remove and set aside.
Add cranberries, orange juice, honey, cinnamon, ginger, cloves, and nutmeg to the pan. Stir and cook 5–7 minutes until cranberries begin to burst and sauce thickens.
Return chicken to pan, spoon sauce over the top. Cover skillet and pressurize cooker.
Once pressure builds, cook several minutes. Then slow release steam. Serve warm.
Notes
Use frozen cranberries if fresh aren't available. Maple syrup is a great honey substitute. For spice simplicity, use pumpkin spice blend.
