Ingredients
  

  • 4 cups chicken broth
  • 1 cup pastina (small pasta)
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 medium celery stalk diced
  • 1 tablespoon olive oil
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for about 5 minutes or until the vegetables begin to soften.
  • Add the minced garlic and sauté for another minute until fragrant.
  • Pour in the chicken broth and bring to a gentle boil.
  • Once boiling, add the pastina and cook according to the package instructions (typically about 5-7 minutes), stirring occasionally.
  • Season the soup with salt and black pepper to taste, adjusting as necessary.
  • Once the pasta is cooked, remove the pot from heat.
  • Serve hot, garnished with fresh chopped parsley. Use a ladle to portion into bowls.

Notes

You can add grated Parmesan cheese for extra flavor.
To make it vegetarian, replace chicken broth with vegetable broth and skip the cheese.
Feel free to customize with additional vegetables like spinach or peas for added nutrition.
