Ingredients
  

  • 1 lb thinly sliced beef (such as flank steak or sirloin)
  • 1 medium onion, sliced
  • 1 medium green bell pepper, sliced
  • 1 cup sliced mushrooms
  • 4 cups cooked pasta (such as penne or rigatoni)
  • 2 cups beef broth
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • to taste salt
  • to garnish fresh parsley, chopped

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions, green bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are softened.
  • Add the thinly sliced beef to the skillet. Season with garlic powder, black pepper, and salt to taste. Cook for 5-7 minutes, or until the beef is browned and cooked through.
  • In a mixing bowl, combine the cooked pasta and beef mixture. Pour in the beef broth and mix until well combined.
  • Transfer the pasta and beef mixture into a greased 9x13 baking dish. Top with shredded provolone and mozzarella cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

Feel free to add or substitute other vegetables such as spinach or jalapeños for extra flavor.
Leftover casserole can be stored in an airtight container in the refrigerator for up to 3 days.
