Ingredients
  

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup bell pepper, sliced (about 1 medium pepper)
  • 1 cup broccoli florets
  • 1 cup pineapple chunks (fresh or canned)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated or minced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon honey (optional)
  • Cooked rice for serving

Instructions
 

  • Heat the vegetable oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces to the skillet, stirring frequently until they start to brown and are fully cooked, about 5 minutes.
  • Add the sliced bell pepper and broccoli florets to the pan. Stir-fry for an additional 2-3 minutes until the vegetables are tender but still crisp.
  • Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  • In a small bowl, mix the soy sauce, cornstarch, and honey (if using). Add this sauce to the pan along with the pineapple chunks.
  • Stir everything together and let it cook for an additional 1-2 minutes until the sauce thickens.
  • Remove from heat and serve over cooked rice.

Notes

Feel free to use other vegetables such as snap peas, carrots, or snow peas if desired.
For a spicier version, add red pepper flakes or sliced jalapeños.
Ensure the chicken is cooked thoroughly to an internal temperature of 165°F (74°C).
