- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 cup bell pepper, sliced (about 1 medium pepper)
- 1 cup broccoli florets
- 1 cup pineapple chunks (fresh or canned)
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated or minced
- 3 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon honey (optional)
- Cooked rice for serving
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces to the skillet, stirring frequently until they start to brown and are fully cooked, about 5 minutes.
Add the sliced bell pepper and broccoli florets to the pan. Stir-fry for an additional 2-3 minutes until the vegetables are tender but still crisp.
Stir in the minced garlic and ginger, cooking for another minute until fragrant.
In a small bowl, mix the soy sauce, cornstarch, and honey (if using). Add this sauce to the pan along with the pineapple chunks.
Stir everything together and let it cook for an additional 1-2 minutes until the sauce thickens.
Remove from heat and serve over cooked rice.
Feel free to use other vegetables such as snap peas, carrots, or snow peas if desired. For a spicier version, add red pepper flakes or sliced jalapeños. Ensure the chicken is cooked thoroughly to an internal temperature of 165°F (74°C).
