- 1 pound potatoes, diced Preferably Yukon Gold or red potatoes.
- 12 ounces smoked sausage, sliced Such as kielbasa or andouille.
- 1 medium onion, diced
- 1 bell pepper, diced Any color.
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- to taste salt
- to taste pepper
- for garnish, optional fresh parsley, chopped
Heat the olive oil in a large skillet over medium heat.
Add the diced potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown slightly.
