  • 2 sheets Puff pastry frozen or fresh, thawed
  • 100 g Basil pesto
  • 6 tablespoons Extra pesto for layering
  • 5 Cherry tomatoes halved
  • Olive oil for brushing
  • Salt to taste
  • Oregano to taste
  • 1 sheet Parchment paper for lining tray

  • Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Unroll the first sheet of puff pastry onto your baking tray and spread 6 tablespoons of pesto evenly.
  • Place the second puff pastry sheet on top, aligning edges.
  • Use a sharp knife to cut out a Christmas tree shape including a small trunk.
  • Slice horizontal branches on both sides of the tree, leaving the center intact.
  • Gently twist each branch to create spirals.
  • Brush entire tree with olive oil.
  • Sprinkle salt and oregano over the pastry.
  • Halve cherry tomatoes and place them as ornaments on branches.
  • Bake for 25–30 minutes until puffed and golden brown. Let cool slightly before serving.

Notes

Best served warm. Store leftovers wrapped in foil at room temp for up to 1 day or refrigerate for 3 days. Reheat gently in oven for crisp texture.
