Ingredients
  

  • 12 ounces spaghetti or any pasta of your choice
  • 4 cups fresh spinach washed and roughly chopped
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes optional
  • 1 lemon lemon juiced and zested
  • ¼ cup grated Parmesan cheese optional
  • salt to taste
  • black pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes, until fragrant but not browned.
  • Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted, stirring occasionally.
  • Add the drained pasta to the skillet with the spinach, along with the lemon juice and zest. Toss to combine. If the pasta seems dry, add a little bit of the reserved pasta water until you reach your desired consistency.
  • Season with salt and black pepper to taste. If desired, sprinkle the grated Parmesan cheese on top before serving.

Notes

Feel free to add other vegetables like cherry tomatoes or mushrooms for extra flavor and nutrition.
You can substitute the Parmesan cheese with a vegan alternative or nutritional yeast for a dairy-free option.
This dish can be made in advance. Just store the cooked pasta in an airtight container in the refrigerator for up to 3 days. Reheat on the stove with a splash of water to loosen it up.
