- 8 ounces cream cheese softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 12 whole graham crackers
- 1 tablespoon lemon juice
- to taste fresh mint leaves for garnish (optional)
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer or whisk to beat until smooth and creamy.
Gently fold in the fresh raspberries and lemon juice, being careful not to break the raspberries too much.
Arrange the graham crackers on a parchment-lined baking sheet.
Spoon a generous amount of the raspberry cream cheese mixture onto each graham cracker.
Bake in the preheated oven for about 10 minutes, or until the cream cheese is warm and just starting to bubble.
Remove from the oven and allow to cool for a few minutes. Garnish with fresh mint leaves if desired before serving.
These bites are best enjoyed warm but can be served cold as well. You can substitute or add other fruits like strawberries or blueberries for added variety. For a gluten-free option, use gluten-free graham crackers.
