Line a baking sheet with parchment paper for easier cleanup, if desired.

Once the carrots are done roasting, remove them from the oven and let them cool slightly.
To serve, spread the whipped ricotta on a serving platter and arrange the roasted carrots on top.
Drizzle the hot honey over the carrots and ricotta, adjusting the amount based on your spice preference.
Garnish with fresh herbs before serving.
