Ingredients
  

  • 1 pound carrots, peeled and cut into even sticks About 4-5 medium-size carrots.
  • 2 tablespoons olive oil
  • to taste salt
  • to taste black pepper
  • 1 cup ricotta cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 2 teaspoons hot sauce Adjust to taste.
  • fresh herbs (like parsley or thyme) For garnish.

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Line a baking sheet with parchment paper for easier cleanup, if desired.
  • In a mixing bowl, toss the carrot sticks with olive oil, salt, and black pepper until they are well coated.
  • Spread the carrots in a single layer on the prepared baking sheet.
  • Roast the carrots in the preheated oven for 25-30 minutes, or until they are tender and caramelized, turning them halfway through cooking for even roasting.
  • While the carrots are roasting, prepare the whipped ricotta. In a bowl, combine the ricotta cheese, lemon juice, and honey. Whisk together until smooth and creamy.
  • Once the carrots are done roasting, remove them from the oven and let them cool slightly.
  • To serve, spread the whipped ricotta on a serving platter and arrange the roasted carrots on top.
  • Drizzle the hot honey over the carrots and ricotta, adjusting the amount based on your spice preference.
  • Garnish with fresh herbs before serving.

Notes

You can substitute other sweet root vegetables like parsnips or sweet potatoes for a variation.
For a vegan option, replace ricotta with a vegan cheese alternative and use agave syrup instead of honey.
