- 3 medium sweet potatoes About 1.5 pounds.
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ¼ cup crumbled feta cheese
- 2 tablespoons honey
- 1 tablespoon fresh parsley, chopped For garnish.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
Wash and peel the sweet potatoes. Slice them into rounds about ½ inch thick.
In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and paprika until evenly coated.
Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, flipping halfway through, or until the sweet potatoes are tender and lightly browned.
