Ingredients
  

  • 3 medium sweet potatoes About 1.5 pounds.
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ¼ cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh parsley, chopped For garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper if desired.
  • Wash and peel the sweet potatoes. Slice them into rounds about ½ inch thick.
  • In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and paprika until evenly coated.
  • Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 20-25 minutes, flipping halfway through, or until the sweet potatoes are tender and lightly browned.
  • Once roasted, remove the sweet potatoes from the oven and transfer them to a serving platter.
  • Drizzle the honey over the sweet potatoes, then sprinkle with crumbled feta cheese and fresh parsley.
  • Serve warm and enjoy!

Notes

For added flavor, you can sprinkle some crushed red pepper flakes for a little heat.
This dish is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave before serving.
