- 1 pound sausage Italian or smoked
- 4 cups cabbage thinly sliced
- 1 cup bell pepper sliced (any color)
- 1 medium onion sliced
- 3 cloves garlic minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil or vegetable oil
- 1 teaspoon ginger minced (optional)
- salt to taste

Slice the sausage into bite-sized pieces.
Heat the sesame oil in a large skillet or wok over medium-high heat. Once hot, add the sausage pieces and cook for about 5 minutes until browned, stirring occasionally.
Add the sliced onion and bell pepper to the skillet with the sausage. Sauté for another 3 minutes until the vegetables are soft.
Stir in the minced garlic and ginger (if using), cooking for an additional minute until fragrant.
Add the sliced cabbage to the skillet, tossing well to combine. Cook for another 5-7 minutes, stirring occasionally, until the cabbage is wilted but still slightly crunchy.
Pour in the soy sauce and season with salt and pepper. Stir everything together and cook for another 2 minutes to allow the flavors to meld.
Taste and adjust seasoning if necessary. Remove from heat.
Serve the stir-fry on its own or over cooked rice as desired.
