- 1 cup long-grain white rice or gluten-free rice
- 2 cups chicken broth gluten-free
- 1 pound ground sausage gluten-free
- 1 medium onion diced
- 2 cloves garlic minced
- 1 bell pepper diced (any color)
- 1 cup celery diced
- 1 teaspoon Cajun seasoning
- ½ teaspoon smoked paprika
- to taste salt
- to taste pepper
- 2 tablespoons olive oil
- 2 green onions sliced (for garnish)
Heat olive oil in a large skillet over medium-high heat. Add the ground sausage and cook until browned, breaking it up with a spatula, about 5-7 minutes.
Once the sausage is cooked, add the diced onion, garlic, bell pepper, and celery to the skillet. Sauté for about 5 minutes until the vegetables are softened.
Stir in the Cajun seasoning and smoked paprika, mixing thoroughly to coat the vegetables and sausage.
Add the rice to the skillet, stirring to combine with the sausage and vegetables.
Pour in the chicken broth, ensuring the mixture is well combined. Bring to a boil, then reduce the heat to low and cover the skillet.
Allow the mixture to simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
Remove from heat and let the dish sit, covered, for about 5 minutes. Fluff the rice with a fork before serving.
Garnish with sliced green onions and serve hot.
You can add other vegetables such as peas or corn for added flavor and texture. Adjust the Cajun seasoning to your taste; you can add more for a spicier kick. This dish is great for leftovers as the flavors continue to develop. Store in an airtight container in the refrigerator for up to 3 days.
