Ingredients
  

  • 4 slices baguette or any crusty bread
  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste black pepper
  • optional fresh cilantro or parsley for garnish

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the shrimp, minced garlic, olive oil, salt, and black pepper. Toss until the shrimp are well-coated.
  • Spread the shrimp mixture evenly on the prepared baking sheet. Bake for about 8-10 minutes, or until shrimp are pink and cooked through.
  • While the shrimp is baking, cut avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and black pepper, and mash until smooth but still slightly chunky.
  • Toast the baguette slices in the oven for 3-5 minutes until golden brown and crispy.
  • Once the shrimp are cooked, remove them from the oven. Top each toasted bread slice with a generous spoonful of the mashed avocado, followed by the cooked shrimp.
  • Garnish with fresh cilantro or parsley if desired, and serve immediately.

Notes

For added flavor, consider adding a pinch of red pepper flakes to the shrimp mixture.
This recipe can be doubled or halved based on your needs.
Serve with a fresh salad or a glass of white wine for a complete meal experience.
