1 baking sheet
1 mixing bowl
1 cutting board
1 oven
- 4 slices baguette or any crusty bread
- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- to taste salt
- to taste black pepper
- optional fresh cilantro or parsley for garnish
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the shrimp, minced garlic, olive oil, salt, and black pepper. Toss until the shrimp are well-coated.
Spread the shrimp mixture evenly on the prepared baking sheet. Bake for about 8-10 minutes, or until shrimp are pink and cooked through.
While the shrimp is baking, cut avocados in half, remove the pit, and scoop the flesh into a bowl. Add lemon juice, salt, and black pepper, and mash until smooth but still slightly chunky.
Toast the baguette slices in the oven for 3-5 minutes until golden brown and crispy.
Once the shrimp are cooked, remove them from the oven. Top each toasted bread slice with a generous spoonful of the mashed avocado, followed by the cooked shrimp.
Garnish with fresh cilantro or parsley if desired, and serve immediately.
For added flavor, consider adding a pinch of red pepper flakes to the shrimp mixture. This recipe can be doubled or halved based on your needs. Serve with a fresh salad or a glass of white wine for a complete meal experience.
