- 1 pound ground beef
- 1 small onion, chopped
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 package (32 oz) frozen tater tots
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup frozen peas or corn Optional: for added veggies.
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.
Stir in the cream of mushroom soup, garlic powder, salt, and black pepper. If using, add the frozen peas or corn and mix until well combined.
Transfer the beef mixture to a 9x13 inch baking dish, spreading it evenly across the bottom.
Evenly sprinkle the shredded cheddar cheese over the beef mixture.
Arrange the tater tots in a single layer on top of the cheese.
Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
Remove from the oven and let it cool for a few minutes before serving.
Feel free to customize by adding your favorite vegetables or other spices to the meat mixture. This casserole can be made ahead of time and refrigerated before baking; just add an extra 10 minutes to the cooking time if baking from the fridge. Leftovers can be stored in the refrigerator for up to 3 days.
