Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • 1 can diced tomatoes 14.5 ounces, with juices.
  • 2 cups fresh spinach Chopped.
  • ½ cup heavy cream Adjust consistency to preference.
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic Minced.
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • to taste pieces fresh basil leaves For garnish (optional).

Instructions
 

  • Heat olive oil in a skillet over medium heat. Season the chicken breasts with salt and pepper, and sear them in the skillet for about 3-4 minutes on each side until golden brown. Transfer to the slow cooker.
  • In the same skillet, add the minced garlic and sauté for about 1 minute. Then, add the diced tomatoes (with juices) and Italian seasoning. Stir well and cook for an additional 2-3 minutes.
  • Pour the tomato mixture over the seared chicken in the slow cooker.
  • Cook on low for 6 hours. About 30 minutes before it's done, add the chopped spinach and heavy cream. Stir gently to combine.
  • Before serving, sprinkle the grated Parmesan cheese over the chicken and cook for an additional 30 minutes.
  • Serve hot, garnished with fresh basil if desired.

Notes

This dish pairs wonderfully with pasta, rice, or crusty bread to soak up the delicious sauce.
You can adjust the consistency of the sauce by adding more or less heavy cream according to your preference.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
