  • 1 cooking spray or silicone muffin liners
  • 1 oven

Ingredients
  

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • ½ cup bell pepper, diced
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional) Optional ingredient.

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease the muffin tin with cooking spray or line it with silicone muffin liners.
  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Add the chopped spinach, diced bell pepper, shredded cheese, salt, black pepper, and garlic powder (if using) to the egg mixture. Stir until all ingredients are evenly incorporated.
  • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about ¾ full.
  • Bake in the preheated oven for 15-20 minutes, or until the egg bites are set in the middle and lightly browned on top.
  • Remove from the oven and allow to cool for a few minutes. Carefully run a knife around the edges to loosen the bites before removing them from the muffin tin.
  • Serve warm or allow to cool completely before storing them in an airtight container in the refrigerator.

Notes

These egg bites can be stored in the refrigerator for up to 5 days and can be reheated in the microwave.
Feel free to customize your egg bites by adding cooked sausage, mushrooms, or other vegetables.
These are great for meal prep and can be made ahead for busy mornings.
