Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 large banana, sliced
  • to taste - Maple syrup For serving

Instructions
 

  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together until well mixed.
  • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; some lumps are okay.
  • Preheat a skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.
  • Pour ¼ cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
  • Once the pancakes are cooked, let them cool slightly. Cut each pancake into quarters.
  • On toothpicks or skewers, alternate threading pieces of pancake with slices of banana and strawberry, creating fun patterns.
  • Serve the skewers drizzled with maple syrup for dipping or drizzling.

Notes

You can customize your skewers with other fruits like blueberries or kiwi.
For a healthier version, you can use whole wheat flour and reduce the sugar.
These skewers can also be made ahead of time and warmed up before serving.
