- 8 slices thick-cut bread Such as brioche or challah.
- 1 cup fresh strawberries Hulled and sliced.
- 1 cup cream cheese Softened.
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup milk
- 1 teaspoon ground cinnamon
- Butter for cooking
In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
Spread the cream cheese mixture evenly on one side of each slice of bread. Layer the sliced strawberries on top of four of the slices, then top with the remaining four slices to make sandwiches.
In another mixing bowl, whisk together the eggs, milk, and ground cinnamon until well blended.
Heat a frying pan or griddle over medium heat and add a small amount of butter.
Dip each sandwich into the egg mixture, ensuring that both sides are coated well.
Place the dipped sandwiches onto the hot pan. Cook each side for about 3-4 minutes, or until golden brown and cooked through.
Once cooked, remove from the pan and serve warm. Dust with powdered sugar and garnish with remaining fresh strawberries.
For extra sweetness, top with maple syrup or honey. You can substitute other berries like blueberries or raspberries if desired. Leftover sandwiches can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the toaster or microwave before serving.
