Ingredients
  

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • ¼ cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup diced celery
  • 1 cup diced bell pepper any color
  • ½ cup grated carrots
  • ½ cup diced red onion
  • ¼ cup sweet pickle relish
  • 2 hard-boiled eggs chopped optional

Instructions
 

  • Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the elbow macaroni and cook according to package instructions, usually about 8-10 minutes, or until al dente.
  • Once cooked, drain the macaroni in a colander and rinse under cold water to stop the cooking process. Set aside to cool.
  • In a large mixing bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Whisk until well combined.
  • Add the cooled macaroni to the bowl with the dressing. Then, mix in the diced celery, bell pepper, grated carrots, diced red onion, and sweet pickle relish. Stir until everything is evenly coated with the dressing.
  • If desired, gently fold in the chopped hard-boiled eggs for added protein and flavor.
  • Cover the salad with plastic wrap or a lid and refrigerate it for at least 1 hour before serving to allow the flavors to meld.
  • Serve chilled and enjoy!

Notes

This salad can be made a day in advance. Just ensure to give it a good stir before serving, as the dressing may thicken when chilled.
Feel free to customize the salad by adding other ingredients such as peas, corn, or diced ham according to your taste.
For a lighter version, you can substitute half of the mayonnaise with Greek yogurt.
