- 2 cups elbow macaroni
- 1 cup mayonnaise
- ¼ cup apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup diced celery
- 1 cup diced bell pepper any color
- ½ cup grated carrots
- ½ cup diced red onion
- ¼ cup sweet pickle relish
- 2 hard-boiled eggs chopped optional
Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the elbow macaroni and cook according to package instructions, usually about 8-10 minutes, or until al dente.
Once cooked, drain the macaroni in a colander and rinse under cold water to stop the cooking process. Set aside to cool.
