Ingredients
  

  • 1 ½ pounds ground beef
  • 1 cup gluten-free breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk (or dairy-free milk)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup ketchup (for topping) For added moisture and flavor.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the ground beef, gluten-free breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, Dijon mustard, oregano, thyme, salt, and pepper.
  • Mix all the ingredients together until just combined, being careful not to overmix.
  • Transfer the meat mixture into a loaf pan, shaping it to fit the pan evenly.
  • If desired, cover the top with ketchup for added moisture and flavor.
  • Place the loaf pan on a baking sheet to catch any drippings and transfer it to the preheated oven.
  • Bake for about 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C).
  • Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Notes

Feel free to add your favorite vegetables, like grated carrots or bell peppers, for added nutrition.
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
