Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, gluten-free breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, Dijon mustard, oregano, thyme, salt, and pepper.
Mix all the ingredients together until just combined, being careful not to overmix.
Transfer the meat mixture into a loaf pan, shaping it to fit the pan evenly.
If desired, cover the top with ketchup for added moisture and flavor.
Place the loaf pan on a baking sheet to catch any drippings and transfer it to the preheated oven.
Bake for about 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (70°C).
Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
