Ingredients
  

  • 12 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried Italian seasoning
  • 1 cup heavy cream For a lighter version, substitute half with plain Greek yogurt.
  • 1 cup chicken broth
  • 1 cup spinach, chopped
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a skillet, heat the olive oil over medium heat. Add the bite-sized pieces of chicken and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the sun-dried tomatoes and stir well.
  • Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer. Allow it to cook for about 3-5 minutes until slightly thickened.
  • Stir in the chopped spinach and cooked chicken. Let it simmer for another 2-3 minutes until the spinach is wilted.
  • Add the cooked penne pasta to the skillet and mix thoroughly to coat the pasta in the sauce. Stir in the grated Parmesan cheese until incorporated. Adjust seasoning with salt and pepper as needed.
  • Serve hot, garnished with fresh basil leaves if desired.

Notes

For a lighter version, you can substitute half of the heavy cream with plain Greek yogurt.
Feel free to add more vegetables, such as bell peppers or mushrooms, for extra flavor and nutrition.
