Ingredients
  

  • 2 medium zucchinis About 2 cups grated.
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic Minced.
  • ½ cup breadcrumbs
  • 1 large egg
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • as needed olive oil spray For greasing.

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, if desired. Lightly grease the parchment or the baking sheet with olive oil spray.
  • Grate the zucchinis using a grater and place them in a mixing bowl. Squeeze out excess moisture using a clean kitchen towel or paper towel to avoid sogginess.
  • Add the cheeses, minced garlic, breadcrumbs, egg, dried oregano, salt, and black pepper to the bowl with the zucchini. Mix everything until well combined.
  • Using a spoon or cookie scoop, form small balls from the mixture and place them onto the prepared baking sheet, leaving space between each bite.
  • Bake in the preheated oven for about 20 minutes or until they are golden and crisp on the outside.
  • Remove from the oven and let them cool for a few minutes before serving.

Notes

For extra flavor, try adding chopped fresh herbs like parsley or basil to the mixture.
These bites can be served with marinara sauce or a yogurt dip for added flavor.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
