- 2 medium zucchinis About 2 cups grated.
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 cloves garlic Minced.
- ½ cup breadcrumbs
- 1 large egg
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- as needed olive oil spray For greasing.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper, if desired. Lightly grease the parchment or the baking sheet with olive oil spray.
Grate the zucchinis using a grater and place them in a mixing bowl. Squeeze out excess moisture using a clean kitchen towel or paper towel to avoid sogginess.
Add the cheeses, minced garlic, breadcrumbs, egg, dried oregano, salt, and black pepper to the bowl with the zucchini. Mix everything until well combined.
Using a spoon or cookie scoop, form small balls from the mixture and place them onto the prepared baking sheet, leaving space between each bite.
Bake in the preheated oven for about 20 minutes or until they are golden and crisp on the outside.
Remove from the oven and let them cool for a few minutes before serving.
For extra flavor, try adding chopped fresh herbs like parsley or basil to the mixture. These bites can be served with marinara sauce or a yogurt dip for added flavor. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
